This study shows the causal mechanism that when seed oils, high in Omega 6 Linoleic acid, are heated (like in a deep fryer) the delicate fatty acids form a toxic compound called acrylamide.
Exposure to acrylamide damages the blood brain barrier, changes the way fat is metabolized in the brain, causes lipid peroxidation which damages the structural fats of the brain, and unleashes a blast of reactive oxygen species that lead to neuroinflammation.
In animals this brain dysfunction leads to less exploration and sociability, and more anxious and depressive behavior.
